Watermelon Granita with Blueberries

Hands-on time: 15 minutes; Total time: 45 minutes.

Serves 6.

INGREDIENTS:
◦ 6 cups (about 2 lb.) seedless watermelon, cubed
◦ 1/2 cup fresh lime juice
◦ 1/3 cup agave nectar
◦ 2 cups fresh blueberries
◦ 6 mint sprigs

DIRECTIONS:
1. In a food processor, puree watermelon, working in 2 batches.

2. Strain puree through a sieve, reserving liquid, discard solids.

3. In a 9″x13″ metal pan, combine watermelon puree, juice and agave.

4. Freeze, scraping thoroughly with a fork every 20-30 minutes, until granita resembles coarse crystals, 2-4 hours.

5. Remove from freezer; scrape granita once more with a fork.

6. Divide among 6 glasses. Top each with 1/3 cup blueberries and a mint sprig.

Lemony Salmon and Spinach Salad

Hands-on time: 10 minutes; Total time: 10 minutes.

Serves 1.

INGREDIENTS:
◦ 3 oz. salmon
◦ 2 tsp. EVOO, separated
◦ Spritz of fresh lemon juice
◦ 2 cups baby spinach
◦ 1/2 cup blueberries
◦ 1/2 cup cooked quinoa
◦ 1/4 sliced avocado
◦ 1 tbsp. sunflower seeds
◦ 1 tbsp. balsamic vinegar

DIRECTIONS:
1. Heat broiler.

2. Season salmon with 1 tsp. EVOO and spritz of lemon juice; place in an ovensafe skillet and broil for 3 minutes

3. In a bowl, top spinach with blueberries, quinoa, avocado, salmon, sunflower seeds, balsamic vinegar and 1 tsp. EVOO.

Blueberry Oatcakes

Hands-on time: 15 minutes; Total time: 15 minutes.

Serves 2 (makes 2 VERY hearty oatcakes).

INGREDIENTS:
◦ 8 egg whites
◦ 1 cup rolled oats (gluten-free if you so choose)
◦ 2 tsp. cinnamon
◦ 2 tsp. water
◦ 2/3 cup blueberries
◦ 2 Tbsp. sliced almonds
◦ 1/2 cup sheep/goat yogurt
◦ OPTIONAL: 1 tsp. pure maple syrup

DIRECTIONS:
1. In a bowl, combine egg whites, rolled oats, cinnamon and water. Whisk 1 minute.
2. Stir in blueberries and almonds.
3. Heat a medium skillet coated with cooking spray over medium heat; cook batter until eggs are set on bottom, about 3 minutes; flip oatcake and cook 1 minute.
4. Top with yogurt and maple syrup.

Blueberry Cinnamon Icey

Serves 1.

INGREDIENTS:

◦ 1 cup coconut/soy/almond/rice milk
◦ 1 cup blueberries
◦ 1/2 tsp. cinnamon
◦ 3/4 cup ice

DIRECTIONS:

1. Blend all ingredients and enjoy!
