N’oatmeal Raisin Cookies

Hands-on time: 40 minutes; Total time: 40 minutes.

Makes 8-10 candies.

INGREDIENTS:
◦ 2 cups almond meal
◦ 1/2 cup flax seed meal
◦ 1/2 cup unsweetened, shredded coconut
◦ 1/2 cup raw sunflower seeds
◦ 1/2 cup raw pumpkin seeds
◦ 1 tbsp. cinnamon
◦ 1 tsp. Himalayan or Celtic sea salt
◦ 1 tsp. baking soda
◦ 2 eggs
◦ 1/2 cup pure maple syrup
◦ 1 tsp. vanilla extract
◦ 1/2 cup coconut oil
◦ 1 cup raisins

DIRECTIONS:
1. Preheat oven to 325 degrees.
2. In a large mixing bowl, combine dry ingredients.
3. In a small mixing bowl, combine all remaining ingredients (except raisins) with a hand mixer.
4. Stir wet ingredients into dry ingredients. Stir in raisins.
5. On a parchment-lined baking sheet, drop tablespoon-sized amounts of cookie batter. Bake for 15 minutes.
6. Allow cookies to cool and serve.
