Peppermint Patties

Hands-on time: 40 minutes; Total time: 40 minutes.

Makes 8-10 candies.

INGREDIENTS:
◦ 1 cup 72% dark chocolate or carob chips
◦ 1 tsp. peppermint oil
◦ 1/2 cup coconut oil
◦ 1/4 cup shredded unsweetened coconut
◦ 1 tsp. pure maple syrup

DIRECTIONS:
1. Melt chocolate on low heat and add 1/4 tsp. peppermint oil.
2. In a small mixing bowl, combine remaining ingredients (including remaining peppermint oil) and stir until well blended.
3. Paint melted chocolate into candy molds.
4. Place molds in freezer for 10 minutes.
5. Fill molds with mint filling and place in the freezer for 10 minutes.
6. Cover with a layer of chocolate and freeze until hardened (at least 10 minutes).
